Very Berry Muffins


   My latest concoction.  This power food is great for on-the-go snacking.  Staying anabolic (muscle building & maintenance) means eating every 2-3 hours.  So, throw a couple of these in your bag and stay strong all day long.  Bake ahead, wrap individually, and store in refrigerator.  They disappear quickly or I would suggest freezing them, also. 

Ingredients:
   2 cups whole wheat flour
   1/2 - 3/4 cups baking sweetener, such as Splenda
   1 tbs. baking powder
   1 tsp. ground cinnamon or 1/4 tsp. nutmeg
   2 tbs. ground flaxseeds
   11 oz. can light mandarin oranges
   2 egg whites
   1 tsp. vanilla extract
   1 cup frozen mixed berries (rasp., blackberries, & blueberries or similar mix)

Crush the oranges in their syrup and set aside.  Mix the flour, sweetener, baking powder, cinnamon or nutmeg, and flax in a large bowl.  Add the crushed oranges, egg whites, and vanilla, stir to mix well.  Fold in the berries.  Spray muffin pan with non-stick cooking spray.  Bake at 350 degrees for 15-17 min., or until a wooden toothpick inserted near the center comes out clean.  Makes 12.  Nutrition Info. 1 Muffin - Calories 100, Fat 1g, Carbs 19g, Fiber 2g, Complete Protein 1.5g
*Boost the protein content by adding 2 scoops vanilla whey protein powder to the mix.
