Peanut Butter Pancakes

                   
                  

   For you peanut butter lovers out there.  These pancakes have a  light, fluffy, texture.  Yet, they remain satisfying and delicious. 

Ingredients:

   1/2 cup oats
   2 tbs. sweetener (such as Splenda)
   1 tsp. baking powder
   1 egg white
   1 tbs. natural peanut butter
   3 - 4 tbs. water

Combine the oats, sweetener, and baking powder in a food processor.  Process for 10 seconds.  Add the remaining ingredients, being careful not to add too much water.  Blend for 10 seconds, scape the sides down, and blend 10 seconds more, or until smooth.  Spray non-stick griddle with cooking spray.  Cook over medium heat until sides appear dry and bottom is done, flip once.  Makes 3 medium pancakes.
