Zesty Zucchini Bread

   
                     

   Moist and flavorful.  This bread is pleasantly sweet and has a rich hearty texture.

Ingredients:
   
   1 1/2 cups whole wheat flour
   1 tsp. ground cinnamon
   1/2 tsp. baking soda
   1/4 tsp. baking powder
   1/4 tsp. nutmeg
   1 cup baking sweetener (such as Splenda)
   1 cup finely shredded unpeeled zucchini
   1/2 cup natural applesauce
   2 egg whites
   1/2 tsp. lemon juice
   1/4 cup chopped walnuts (optional)

   In a mixing bowl, combine flour, cinnamon, baking soda, baking powder, and nutmeg.  In a separate bowl, combine sweetener, zucchini, applesauce, egg whites, and lemon; mix well.  Add the flour mixture; stir just till combined.  Stir in walnuts.

   Spray an 8x4x2 inch loaf pan with non-stick cooking spray and pour batter in.  Bake at 325 degrees for 45 minutes or until a toothpick comes out clean.  Cool on wire rack.  Makes 10 servings.
