Chocolate Coconut Muffins

These will have you crazy for muffins!
Kid tested, client approved, my Chocolate Coconut Muffins may be my best creation yet. Very chocolaty, moist, and full of texture...these babies go everywhere to keep hunger at bay.
Ingredients:
2 cups whole wheat flour
1 cup sweetened flake coconut
3/4 cup Splenda
1/2 cup baking cocoa
2 tsp. baking powder
1 tsp. baking soda
1 15oz. can light pears (pureed)
2 egg whites
1tsp. almond extract
1/3 cup water
Combine all the dry ingredients in a large bowl. Add the remaining ingredients and stir to mix well. Spray muffin pans with non-stick spray and fill with batter. Bake at 325 degrees for 15 - 17 minutes, or until toothpick comes out of the center clean, being careful not to over bake. Makes 12 muffins.
