Here's an article from MSN.com that'll make low carb dieting easier on the palate. I've always enjoyed spaghetti squash as a substitute for hash browns and spaghetti because it has a stringy texture and density that really fills you up. Lettuce wraps are great instead of bread and here they have a nice twist on that by using Napa or Chinese bread.
I'm geeked about a few of the other recipes. The cheese-flavored chips look good because they're high in protein and fat and then we have the portobello mushroom pizza, eggplant for pasta, lasagna, and mashed potatoes that caught my eye.
